Hello,
I would like to write German or French text on ELAN, using a French keyboard (azerty). This seems only possible if I click on language = "none" in the tiers attribute menue. Unfortunately, this option doesn't allow to save eaf files. Is there a solution to this? Thank you in advance.

Yes, unfortunately there is a bug in the program that results in an error when saving a file with one of the tiers having "None" selected as the default language.
This will be fixed in the next release so that it is save to use this option.
