The default language that can be selected when creating or changing a tier is currently merely used for providing a suitable input method (e.g. a virtual keyboard). You can temporarily change the language when editing an annotation. In the edit box that appears after double-clicking an annotation, the available languages are selectable in the right mouse popup menu.
Note that a language switch in an (existing) annotation is not visible/detectable in any way other than by looking at the characters used. In other words, no special sign or character is stored in the file to mark a switch.
There is currently no shortcut to switch between two user defined languages, but this feature is already on the wish list.
