Did I understand it correct from former posts, that it is not possible to use Signs from a special font, like the HamNoSys-unicode font?

As far as I know, HamNoSys is not yet real Unicode; the Unicode consortium did not assign a block of character codes for HamNoSys yet.
It is possible to select a font per tier in ELAN, so as soon as HamNoSys is Unicode and you have a font, you should be able to use it in ELAN. Having an input method for it is a yet another matter.
