On Snow Leopard you need ELAN version 3.8.0 or 3.8.1. Older versions won't work.
At what point does the crash occur? When you launch ELAN (without a document) or when you try to open an ELAN file (with associated media file)?
Did you update the system and/or install new media playback components prior to running into this problem?

It wont even open. I click on the program and it jumps in the dock and then closes. I may have updated between now and the last time I ran it successfully. I can't remember the timeline exactly.

That sounds like there is a problem with the Java Application launcher. Maybe ther is some information in a crash log. You can view these logs in the Console application (Applications/Utilities).
In the ELAN install folder there is also a startup shell script which you can try. Open a Terminal window (Applications/Terminal) and drag the file "ElanMac_3-8-1.sh" into the Terminal window. Make sure the Terminal window is active and press Enter. See what happens.
